Review First Catch Your Hare¿ The Art of Cookery Made Plain and Easy (First Catch Your Hare) / Prospect Books (UK):Quite simply, the most important-and the most printed-English cookery book of the eighteenth century which defines for many the food and dining customs of the Georgian era. This is a facsimile edition, for the first time in paperback. The hardback version of this book was published by Prospect in 1994. The facsimile is of the first (1747) edition and preserves its large format. This edition also contains considerable information about Hannah Glasse in a biographical introduction, as well as two essays on the degree to which Glasse was indebted to other authors for her recipes. These essays (by Jennifer Stead and Priscilla Bain) were important milestones in our understanding of the techniques of early cookbook compilation when they first appeared. There is also a detailed and informative glossary, with illustrations where necessary, which help the reader interpret the recipes and the ingredients referred to. The book has a modern index. Hannah Glasse was a remarkable woman. She was not a professional cook, rather her expertise was in dressmaking and mercery. [+]
Nor was she born with any natural advantages. As the illegitimate offspring of a Northumberland gentleman lawyer, she had to make her way in the world-not greatly helped by a somewhat ineffective husband and large family. Thus she turned to a variety of moneymaking ventures, among which was this book (sold direct through a list of subscribers and the shops of friends rather than the book trade). She seems to be almost self-taught both in literacy (her early letters are by no means models of grammar or spelling) and in cookery. Even if her recipes are often filched from other people's books, she certainly puts her own gloss on many of them, and there is a definite authorial voice to the text as a whole. Glasse's book is particularly significant both in its attitudes to the influence of French cookery on the English middle classes and in its reflection of the roles of mistress and servant in the running of an urban household. Its recipes are often successful and still capable of reproduction in the modern kitchen. The first curry recipe printed in England appears here.

That’s a complement I forever will treasure, “flavor first”. My philosophy in learning to cook and becoming creative is the mastering of the basics: Cooking with Wines, Liqueurs and other types of alcoholic and nonalcoholic beverages; using the finest ingredients available, keeping herbs in balance with all else throughout the meal, being patient, and learning them all well in an orchestrated, experimental manner, all the while concentrating on taste rather than being overly artistic. Because after you’ve mastered the basics you’ll then know which types of garnishing will be compatible and the types of herbs which will subtly complement the main ingredient without either of those stealing the show. I believe eye appeal should draw immediate attention to the plate, but flavors in the plate must be the “Star of the Show”. So, in a nutshell, I recommend knowing about herbs, their strengths and their appropriate usages and dosages. Keep foods simple using the freshest highest quality ingredients possible and considering “conflict” verses “compatibility” of herbs and spices. Placing a limit on amounts of some stronger herbs such as basil, bay leaves, garlic, oregano, rosemary, thyme, etc. in any dish to achieve that balance of flavors in your food which keeps complements coming your way from your friends and family for a long-long time. Trends, excessive and chemically imbalanced use of herbs, spices and processed sauces apparently have a place in our society but, a person who possesses and uses their learned ability to transform a common dish into a dish of irresistible flavors, with balanced amounts of such seasonings, displays an accomplished talent. A talent desired by many but achieved by those who use natural flavor enhancers wisely and, so now without prompts from the kitchen, let “your” achieved “results speak for themselves”. “Enjoy”! Review Curye on Inglysch (Middle English recipes) (Early English Text Society Supplementary Series) / Early English Text Society:This unique collection of recipes, or menus as they include not only how to make a dish but also how and when to serve it, has been compiled from more than twenty medieval manuscripts. The recipes date from the fourteenth century and are the earliest such examples in English. Interestingly, it appears that many of these recipes, found only on the menus of the upper classes, remained virtually unchanged until the sixteenth century. The menus include the all-important order of serving, that strict etiquette that ruled medieval mealtimes, and which meant that most members of a household were only entitled to the first course and that the more delicate dishes were served only to the higher ranks. This too seems to have remained unchanged for hundreds of years. Here we can also see how it was thought natural to take the most substantial foods first, leaving the richer and sweeter courses for later, much as we do today. We do not, however, include small game birds as part of `dessert' as these menus do. Presented here in early English, this invaluable collection gives great insight into the medieval kitchen and household, and is the perfect guide to modern recreations of medieval meals and feasts.
