Review Simply Lebanese / Garnet Publishing Ltd:

InaÂ’am Atalla introduces us to the exotic flavours and colours of Lebanese cuisine using an abundance of wholesome ingredients, combined with fresh herbs and subtle spices, to make delicious and healthy dishes. This book is the product of her wealth of experience and her desire to dispel the complexities and mysteries surrounding Middle Eastern cookery by using simple techniques and easily available ingredients. With her obvious enthusiasm, the author inspires the reader to attempt a variety of easy-to-follow recipes, from the simplest soup to the more complicated main course, and from traditional recipes such as tabbouleh and kibbeh to the more unusual and creative variations that have been developed by her for the menu at her restaurant. Your level of experience is immaterial: supplemented by beautiful colour photography, InaÂ’amÂ’s anecdotes and tips for the cook create the illusion that this is a personal cookery lesson between author and reader, while the book as a whole remains simply a pleasure to read.

"This book is made up entirely of recipes contributed and well-tried by countrywomen scattered over the length and breadth of the country. The dishes you will find here have not been concocted by experts with all the resources of a modern kitchen. They have been cooked by succeeding generations of women in the farmhouses of the British Isles: upon modern cookers, upon open fires, upon old-fashioned ranges; with every variety of fuel, from peat and oil to electricity. Review Soffritto: A Delicious Ligurian Memoir / Allen & Unwin:

At once a family saga, a love story, an eating guide, and a travel memoir, this recollection follows Lucio Galletto as he returns to his homeland in search of his foundations, his personal soffritto. In 1975, Lucio ran away to Australia with a beautiful woman with whom he fell in love at his parents’ restaurant—legendary for the way they cooked the local specialties—in Lunigiana, a city in northern Italy. This narrative traces Lucio on his mission to understand his family, the food, and the culture that prepared him to create the delicious menus in his restaurant, thousands of miles away from his birthplace and family. Full of tales from farmers, fishermen, war heroes, winemakers, waiters, hunters, cooks, cousins, aunts, shepherds, and scholars, this portrait of a journey explores the ingredients that make a life.

Review Giovanna's Legacy Gifts from Her Italian Kitchen / Xlibris Corporation:

This is the first in a series of cookbooks that will be published to honor my mother and extraordinary Italian cook, Giovanna Morelli Falbo. It contains my mother's favorite recipes, those she brought with her from her home in Italy, and that nourished our family and friends as we grew up in Abington Pennsylvania. The next edition, "Giovanna's Legacy: An Italian/American Kitchen," will feature recipes I've developed, using principles I learned from her through the years as we prepared meals together. The book is a collection of over 180 recipes preserving the Italian heritage of a remarkable woman, my Mom. Born and raised in Calabria, Italy, these homemade meals embrace the essence of a woman who loved feeding others and watching their delight. The collection includes recipes from traditional Italian holiday meals to everyday celebrations and dining. You will find recipes such as Antipasto, baked ziti and lasagna, pasta with fennel, olives, tomatoes and pine nuts, rice patties, baccala salad, chicken and veal piccata, roasted pork with fennel, pepper and potato frittata (omelet), stuffed eggplant, Easter Pie, Italian Wedding soup, pizelles, cherry pudding cheese cake, biscotti, tiramisu, marinara sauce, plus more.

Review Girardet: Recipes from a Master of French Cuisine / Ten Speed Press:

In the 1970s, in a village outside Lausanne, Switzerland, Frdy Girardet was creating sublime French cuisine to international acclaim. Now, 20 years after the publication of his landmark first cookbook, the eagerly anticipated second book has arrived. This is the first book of Chef Girardet's to be available in the English language. Over 100 recipes are presented, included signature dishes with such classic Girardet ingredients as foie gras, truffles, and citrus. Swiss chef Frédy Girardet retired from a superlative culinary career in 1996. He earned three Michelin stars at his restaurant in Crissier, Switzerland, and received numerous prizes throughout his career, including the Gault-Millau Cle d'Or and the Grand Prix International de l'Art de la Cuisine. In Girardet, he presents some of the most sophisticated and breathtaking dishes prepared in the last 15 years of his career. His first book, La cuisine spontanee, was published in 1982 and is still selling in Europe. In dishes such as the Lightly Jellied Chicken Bouillon with Truffled Foie Gras and Mousseline of Peas, six ingredients come together in a handful of steps to produce a silky-textured, three-layer dish of shimmering light and concentrated flavor. Cream of Broccoli Soup with Wild Mushrooms is as simple as can be, but has never looked or tasted so magnificent. [+]
This is serious food. And while many of the dishes involve myriad ingredients and steps, you can easily reduce them to the main element and a sauce, and still be left with something spectacular. Step-by-step instructions demystify dishes such as Duck Terrine with Pistachios, Confit Duckling with Spices and Lime, and Crisp Sweetbreads with Port and Ginger. Elegant desserts include Wild Strawberry and Champagne Mousseline, and Poached Pears with Orange Syrup, Plum Fritters, and Hazelnut Ice Cream. Girardet may not be cooking for us anymore, but he's left excellent instructions. -Leora Y. Bloom.

Dewey code: 641.591822
Price: $23.00

Review Mediterranean Cooking Revised Edition / Ecco:

"When I develop my recipes I always look for ways to create what I call the Big Taste. While I enjoy eating simple grilled foods, what interests me when I cook are dishes with a taste that is fully dimensional. What do I mean by Big Taste? I mean food that is deeply satisfying, and that appeals to all the senses. "This revised edition of Mediterranean Cooking celebrates the sensuous pleasures and "Big Taste" of cooking in the various styles of the countries surrounding the world's largest inland sea. In more than 150 authentic recipes (75 of them brand new), Wolfert reveals the aromas, flavors, and textures of this bountiful area, which includes coastal France, Spain, Italy, Greece, Morocco, Tunisia, and other neighboring countries. Recipes are indexed by nationality and course for those who wish to serve a complete Mediterranean meal from a particular country or region. Each recipe states the equipment needed and gives approximate times for preparation and cooking. There is also a list of suppliers of ingredients that may not be locally available. Wolfert's culinary expertise, for which she has been hailed by Food & Wine magazine as the "Mistress of the Mediterranean,"is evident in the stylish and informative way she presents each delicious recipe. Among the dishes included in this sumptuous volume are Spinach and Cheese Dumplings with Gorgonzola Sauce, Roast Pork with Oranges, Couscous in the Style of Tangier, and Honey Walnut Cake. [+]
In addition to being fresh and delicious, the cuisine of this sunny region is lower in saturated fats and higher in fiber than most other cooking styles. The focus on fruits, vegetables, and grains rather than meat and the reliance on red wine and olive oil are believed to contribute to the long, healthy lives of the Mediterranean peoples. Paula Wolfert's reputation as one of the world's preeminent food writers and cookbook authors, combined with her acute knowledge of the Mediterranean region, makes this book a mandatory addition to the kitchen of anyone who cares about eating well.

Review Buon Appetito, Your Holiness: The Secrets of the Papal Table / Diane Pub Co:

A titillating, intriguing, & hugely enjoyable account of the papacy & papal culinary tastes, seen through the often secret recipes of the Popes' storied kitchens, from St. Peter himself to the present pontiff. Italian social historians Mariangela Rinaldi & Mariangela Vicini here give us a fascinating history of the papacy, while at the same time providing recipes which offer a vivid & colorful fresco of food in Italy & Europe, from the origins of papal Rome to the present day. The authors reveal not only the culinary secrets of the papal kitchens but offer many of the favorite recipes with which the Holy Fathers regaled themselves. The recipes, ranging from the plain & the classic to the wildly eccentric, are for the most part extremely easy to follow. Italy being Italy, food there forms a central part of the culture and of daily life, even in the otherworldly confines of the Vatican. Popes being human beings as well as ambassadors of the divine, the food of the Vatican has ranged, over 2,000 years, from the ascetic to the sumptuous, reflecting the tastes of the officeholder. Where, for instance, John Paul II favors clear soups and the occasional serving of white meat, his Renaissance predecessor Alexander VI was an accomplished and omnivorous glutton-to whose endless appetite, write Parma-based historians Rinaldi and Vicini, the Western world owes the custom of the Christmas Eve feast. Rinaldi and Vicini offer a vivid, anecdotal, and thoroughly entertaining account of the popes and their varied palates, matching historical observations with recipes fit for a celestial table. For the first pope, Saint Peter, they suggest a wondrous risotto prepared with arborio rice and canteloupe, followed by sole stuffed with crayfish and truffles-a bit elaborate for that simple fisherman, perhaps, but delicious nonetheless. [+]
For Paul II, the great humanist and tactician, their menu calls for Venetian rice soup, baked grouse, and Roman-style tripe-not the stuff of an ordinary meal, but a sure hit among the daring. And to commemorate the latest year of Jubilee, Rinaldi and Vicini suggest a nice glass of Brunello di Montalcino, one of Italy's greatest wines, but also a slice of pane della carità, or "bread of charity," made of equal parts of wheat, oat, and barley flour. Rinaldi and Vicini's book mixes well-tested recipes with fascinating, sometimes bizarre episodes of ecclesiastical history. In every regard, it's a treat. -Gregory McNamee.
